Chocolate Cherry Almond Granola

- 1/3 cup coconut oil, melted
- 1/3 cup maple syrup
- 1 tsp vanilla extract
- 1 tsp almond extract (optional, for more almond flavor)
- 1/2 tsp salt
- 1/4 cup cocoa powder (unsweetened)
- 3 cups rolled oats
- 1 cup slivered almonds
- 1 cup shredded coconut (unsweetened)
- 1/2 cup dark chocolate chips
- 1/2 cup dried cherries
Preheat oven to 350F and line a large baking sheet with parchment paper.
In a large bowl, add melted coconut oil, maple syrup, vanilla, almond extract, cocoa powder, and salt and whisk to combine.
Add oats, almonds, and coconut shreds and mix well until evenly coated.
Spread the mixture evenly over the baking sheet.
Bake for 20-25 minutes until slightly browned and crisp. The granola will also crisp up more as it cools.
Add chocolate chips and dried cherries to warm granola and mix well to combine. The chocolate will melt - be sure to spread it around well!
Use raw (untoasted) almonds and coconut so that they don’t burn during cooking. If you already have toasted almonds or coconut, just add them after baking instead!
This granola will keep in an air-tight container at room temperature for up to a month.
