Chocolate Espresso Chia Pudding

This chocolate espresso chia pudding is rich and creamy, but packed with fiber and nutrients to make it a healthy breakfast or sweet treat.

Ingredients
  

  • 1/2 cup chia seeds
  • 1 3/4 cup milk of choice (I used coconut milk)
  • 2 shots espresso (or 1 tbsp instant coffee dissolved in 1/4 cup hot water)
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup
  • 2 tbsp cocoa powder

Instructions
 

  • To a large tupperware container or bowl, add chia seeds and milk and mix right away to combine, being sure to break up any clumps.
  • Add espresso, vanilla, maple syrup, and mix again.
  • Sift cocoa powder in to prevent clumps, them mix well one last time.
  • Cover and refrigerate for 4 hours or overnight to thicken.
