Cinnamon Roll Protein Bites

These no-bake cinnamon roll protein bites are a healthier treat for when you're craving something sweet! Each bite has 9 grams of protein!

Ingredients
  

Protein Bites
  • 1/2 cup cashew butter (can sub almond butter)
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 2/3 cup vanilla plant-based protein powder (do not sub whey)
  • 1/4 cup almond flour
  • 2 tsp cinnamon
Cream Cheese Frosting
  • 2 tbsp greek yogurt (plain or vanilla)
  • 2 tbsp cream cheese
  • 1 1/2 tsp maple syrup

Instructions
 

  • In a large bowl, add cashew butter, maple syrup, vanilla extract and salt and stir until combined.
  • Add protein powder and mix again until fully incorporated.
  • Add almond flour and mix again. The dough will be very thick. It may be easier to mix with your hands at this point.
  • Form the dough into a ball. Roll out with a rolling pin to a large rectangle shape about 1/4" thick. Cover the entire rectangle with a generous dusting of cinnamon.
  • Roll the dough from the long end into a log. Slice into 10 equal pieces and place them on a plate or in a large tupperware container.
  • To make the frosting, whisk together greek yogurt, cream cheese, and maple syrup until smooth. Add to a sandwich bag, cut a small hole in one corner, and pipe onto the protein bites. Sprinkle with cinnamon.

Notes

Store in the fridge for 3-4 days. The bites freeze well if you don't plan on eating them all right away, just wait to frost them until you are ready to eat. 
P.S. If you're feeling lazy, you can mix the cinnamon into the dough and roll them into balls instead. The cream cheese frosting is optional, but highly delicious. Enjoy!
