Healthy Pineapple Shrimp Fried Rice

Ingredients
  

  • 2 tbsp olive oil, divided
  • 1 lb shrimp (fresh or frozen)
  • 1 medium onion, chopped
  • 3 medium carrots, chopped
  • 1 tbsp garlic, minced
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 2 cups frozen riced cauliflower
  • 2 cups cooked rice
  • 2 tbsp low-sodium soy sauce
  • 1 tsp curry powder
  • 1 tsp ground ginger
  • 1 cup canned pineapple chunks, drained and chopped
  • 1/2 cup cashews

Instructions
 

  • Heat a large pan with 1 tbsp olive oil over medium heat.
  • Add onions and carrots and cook for 2-3 minutes while stirring until onions become translucent.
  • Add garlic and cook for 1-2 more minutes.
  • Add frozen corn, peas, and cauliflower rice. Cook for about 8 minutes or until peas are soft, stirring often.
  • Meanwhile, prepare the shrimp. If using frozen shrimp, run under cold water in a strainer in the sink for 3 minutes, mixing often. Pat dry. Heat a medium pan with 1 tbsp olive oil over medium-high heat. Place shrimp in the heated pan and cook for 2-3 minutes on each side until lightly browned and fully cooked through. Season with salt and pepper if desired. Remove from heat and set aside.
  • To the pan with the veggies, add cooked rice, soy sauce, curry powder, and ginger and stir. Cook for 2 more minutes.
  • Add pineapple chunks and cashews and mix again.
  • Finally, add shrimp to the fried rice and cook until shrimp are heated through. Serve and enjoy!
