Cook rice using desired method (if using pre-cooked rice, skip this step).
Heat a large pan over medium heat and add olive oil. Add shaved beef into the pan, using a fork to separate the pieces.
Add garlic, ginger, 2 tbsp of soy sauce, and honey to the beef and mix to combine. Cook for about 5-7 minutes while stirring, until beef is no longer pink. Once beef is fully cooked, add toasted sesame seeds and sesame oil, stir, and remove from heat.
Meanwhile, heat another large pan over medium heat. Add broccoli and about 1/3 cup water and cover. Steam for about 4 minutes until tender. Remove the lid, add remaining 1 tbsp soy sauce and mix to combine. Cook for another 1-2 minutes, then remove from heat.
Heat edamame beans in the microwave or stovetop.
Once the rice is fully cooked, assemble your bowls by adding rice, edamame, beef, and broccoli to the bowl. Feel free to top with additional toasted sesame seeds if desired.
