Ingredients

yellow onion, diced

red bell pepper, diced

tbsp
garlic, minced

italian seasoning
(or 1/2 tsp each: dried oregano, basil, and thyme)

smoked paprika

(use less if watching salt)

ground chicken

sun-dried tomatoes in olive oil, diced

cup
tomato paste

chicken broth
(low-sodium if watching salt)

uncooked orzo

spinach, chopped

cup
shaved parmesan cheese, for topping
Instructions
Heat olive oil in a large pot over medium heat.
Add onion and bell pepper and sautee for 3-5 min until onions are translucent and slightly browned.
Add garlic and seasonings, stir, and cook for 2 more minutes.
Add ground chicken and break up into small chunks. Mix to combine with peppers and onions, stirring frequently until chicken is mostly cooked through.
Add tomato paste, sun-dried tomatoes, and broth and stir to combine.
Cover and bring to a boil.
Once boiling, add orzo and cook for 8 minutes or until tender.
Add spinach and cook for 1-2 minutes until wilted.
Remove from heat, serve, and top each bowl with parmesan cheese.

If you would like a creamy version, stir in a few tbsp of heavy cream at the end of cooking.
