Sun-Dried Tomato Chicken Orzo Soup

This sun-dried tomato chicken orzo soup is a healthier comfort meal, packed with protein and nutrients. It makes great leftovers, too!

Ingredients
  

  • 1 tbsp olive oil
  • 1 yellow onion, diced
  • 1 red bell pepper, diced
  • 1 tbsp garlic, minced
  • 1/2 tbsp italian seasoning (or 1/2 tsp each: dried oregano, basil, and thyme)
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt (use less if watching salt)
  • 1 lb ground chicken
  • 1/4 cup sun-dried tomatoes in olive oil, diced
  • 1/3 cup tomato paste
  • 4 cups chicken broth (low-sodium if watching salt)
  • 1 cup uncooked orzo
  • 4 cups spinach, chopped
  • 1/2 cup shaved parmesan cheese, for topping

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add onion and bell pepper and sautee for 3-5 min until onions are translucent and slightly browned.
  • Add garlic and seasonings, stir, and cook for 2 more minutes.
  • Add ground chicken and break up into small chunks. Mix to combine with peppers and onions, stirring frequently until chicken is mostly cooked through.
  • Add tomato paste, sun-dried tomatoes, and broth and stir to combine.
  • Cover and bring to a boil.
  • Once boiling, add orzo and cook for 8 minutes or until tender.
  • Add spinach and cook for 1-2 minutes until wilted.
  • Remove from heat, serve, and top each bowl with parmesan cheese.

If you would like a creamy version, stir in a few tbsp of heavy cream at the end of cooking.
