White Chocolate Matcha Stuffed Dates

Ingredients
  

  • 10 medjool dates
  • 1/4 cup cashew butter
  • 2 tsp matcha
  • 3 tbsp white chocolate chips
  • 1 tsp coconut oil

Instructions
 

  • Slice a slit in the dates and remove pits. Set on a plate or baking sheet lined with parchment paper.
  • In a small bowl, mix cashew butter with matcha until fully combined.
  • Stuff the dates with the matcha cashew butter mixture.
  • In another small microwave-safe bowl, add the white chocolate chips and coconut oil. Microwave for 30-60 seconds and stir until fully melted.
  • Drizzle the white chocolate over the stuffed dates. Add another dusting of matcha to the tops if desired.
  • If eating immediately, place in freezer for ~5 minutes until chocolate hardens. If making for later, store in the refrigerator.
