These coconut cashew butter stuffed dates with dark chocolate are a quick, healthy no-bake dessert or snack made in just 15 minutes.

Ingredients

medjool dates
1/4
cup
cashew butter
(can substitute another nut butter)
1/4
cup
shredded coconut
(unsweetened)
3
tbsp
dark chocolate chips
1
tsp
coconut oil
pinch
sea salt
(optional)
Instructions
Halve dates and remove pits. Set on a plate or baking sheet lined with parchment paper.
In a small bowl, mix cashew butter with shredded coconut.
Stuff the dates with the cashew butter coconut mixture.
In another small microwave-safe bowl, add the dark chocolate chips and coconut oil. Microwave for 30-60 seconds and stir until fully melted.
Drizzle the dark chocolate over the stuffed dates.
Sprinkle with sea salt if desired.
If eating immediately, place in freezer for ~5 minutes until chocolate hardens. If making for later, store in the refrigerator.
