These coconut cashew butter stuffed dates with dark chocolate are a quick, healthy no-bake dessert or snack made in just 15 minutes.

Ingredients
  

  • 10 medjool dates
  • 1/4 cup cashew butter (can substitute another nut butter)
  • 1/4 cup shredded coconut (unsweetened)
  • 3 tbsp dark chocolate chips
  • 1 tsp coconut oil
  • pinch sea salt (optional)

Instructions
 

  • Halve dates and remove pits. Set on a plate or baking sheet lined with parchment paper.
  • In a small bowl, mix cashew butter with shredded coconut.
  • Stuff the dates with the cashew butter coconut mixture.
  • In another small microwave-safe bowl, add the dark chocolate chips and coconut oil. Microwave for 30-60 seconds and stir until fully melted.
  • Drizzle the dark chocolate over the stuffed dates.
  • Sprinkle with sea salt if desired.
  • If eating immediately, place in freezer for ~5 minutes until chocolate hardens. If making for later, store in the refrigerator.
