Coconut Cashew Butter Stuffed Dates
These coconut cashew butter stuffed dates are a perfect quick snack or healthy dessert when you’re craving something sweet but still want to keep it healthy. The flavor is reminiscent of Samoa girl scout cookies, which are the best ones in my opinion. With chewy Medjool dates, creamy cashew butter, shredded coconut, and a drizzle of dark chocolate, these bites are indulgent while still being made entirely from whole food ingredients.

These only take 15 minutes to make, require no baking, and are naturally sweetened with dates and just a touch of dark chocolate. That means you get all the rich flavor without loads of added sugar. Dates provide fiber and natural energy (the good kind of carbs!). Cashew butter adds healthy fats and a little bit of plant-based protein. Finally, the coconut and dark chocolate bring a satisfying crunch and richness.

These date bites are perfect for meal prep too. You can make a batch, store them in the fridge, and you’ll have a ready to eat treat for the week. They should keep for about 4-5 days in the fridge. They’re an easy option for a healthy snack, lunchbox addition, or bite sized dessert after dinner. You can also freeze these bites and take them out about 15 minutes before eating to soften. This way, you can always have a healthy sweet treat on hand.

If you’re looking for a no-bake dessert recipe that’s quick, healthy, and delicious, these coconut cashew butter stuffed dates are a must-try. Let me know how you like the recipe in the comments below!
