Ginger Soy Marinated Eggs

- 6 large eggs
- 1/4 cup low-sodium soy sauce
- 2 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tsp ginger (fresh grated or ground)
- 1 tbsp furikake seasoning
Add eggs to boiling water and boil for 7-8 minutes.
Meanwhile, make the marinade. In a medium tupperware container or large jar, add soy sauce, sesame oil, rice vinegar, ginger, and furikake and mix to combine.
After eggs are cooked, transfer eggs to an ice bath (bowl with cold water and ice) to cool for a few minutes.
Peel the eggs, then add them to the container with the marinade and ensure that each egg gets coated with marinade.
Refrigerate and let marinate for at least 1 hour.
If you prefer hard yolks, boil for 9-10 minutes.
These will keep in the fridge for up to 3 days.
