Ginger Soy Marinated Eggs

These ginger soy marinated eggs are full of umami flavor and so easy to make. Perfect for ramen, rice bowls, or quick high-protein snacks!

Ingredients
  

  • 6 large eggs
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp ginger (fresh grated or ground)
  • 1 tbsp furikake seasoning

Instructions
 

  • Add eggs to boiling water and boil for 7-8 minutes.
  • Meanwhile, make the marinade. In a medium tupperware container or large jar, add soy sauce, sesame oil, rice vinegar, ginger, and furikake and mix to combine.
  • After eggs are cooked, transfer eggs to an ice bath (bowl with cold water and ice) to cool for a few minutes.
  • Peel the eggs, then add them to the container with the marinade and ensure that each egg gets coated with marinade.
  • Refrigerate and let marinate for at least 1 hour.

If you prefer hard yolks, boil for 9-10 minutes.
These will keep in the fridge for up to 3 days.
