Ginger Soy Marinated Eggs
When I went to Japan last year, I became completely obsessed with the marinated eggs that come with ramen. They are those perfectly jammy eggs with a silky yolk and a salty, savory flavor that soaks all the way through. I came home determined to recreate them. Now, I make these ginger soy marinated eggs on repeat to have on hand in the fridge.

All you need to do is boil your eggs for 7 minutes, then cool and peel them. While the eggs are cooking, mix up the quick marinade. It has just 4 ingredients: soy sauce, sesame oil, ginger, and furikake seasoning. Once your eggs are peeled, drop them into the marinade, cover, and let them sit in the fridge for at least an hour. Although, a few hours or even overnight will give you the best flavor. These will keep for up to three days, but mine almost never last that long!

Besides being delicious, these are also packed with nutrition. Eggs are one of the best sources of high-quality protein and contain key nutrients like choline (great for brain health) and vitamin D. If you’re watching sodium, you can reduce the soy sauce slightly (or do a mixture of low-sodium soy sauce and water).

Ginger Soy Marinated Eggs
Ingredients
- 6 large eggs
- 1/4 cup low-sodium soy sauce
- 2 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tsp ginger (fresh grated or ground)
- 1 tbsp furikake seasoning
Instructions
- Add eggs to boiling water and boil for 7-8 minutes.
- Meanwhile, make the marinade. In a medium tupperware container or large jar, add soy sauce, sesame oil, rice vinegar, ginger, and furikake and mix to combine.
- After eggs are cooked, transfer eggs to an ice bath (bowl with cold water and ice) to cool for a few minutes.
- Peel the eggs, then add them to the container with the marinade and ensure that each egg gets coated with marinade.
- Refrigerate and let marinate for at least 1 hour.
