Ingredients

onion, diced

celery, diced
(about 8-10 medium stalks)

carrots, diced

bell pepper, diced
1
tbsp
garlic, minced

tsp
smoked paprika

tsp
italian herbs seasoning

lean ground chicken or turkey
(I use 93% lean)

creamy tomato sauce
(I use Trader Joe's vodka sauce)

chicken broth
(low-sodium if watching salt)

spinach, chopped

cheese tortellini
1/4
cup
half and half
(optional, to make it creamy)
Instructions
Add olive oil to a large soup pot and heat on medium heat. Dice onion.
Add onion and cook for 3 minutes, stirring occasionally. Meanwhile, chop other veggies.
Add celery, carrots, and bell pepper to pot once chopped, continue stirring.
Add garlic, smoked paprika, and italian seasoning and cook for about 3 more minutes, stirring frequently.
Add chicken or turkey to the pot and break up the meat. Mix frequently to cook the meat throughout.
Once the meat is almost cooked, add tomato sauce and chicken broth.
Cover and simmer for 10 minutes.
Add tortellini to simmering soup, stir, cover and cook for 5 minutes or until tortellini is tender.
Add spinach, stir, cover and cook for 2 more minutes.
If you desire a creamy soup, add half and half, mix well, and turn off heat.
Serve as-is or add grated parmesan on top if desired.
