Ingredients

  • 1 tbsp olive oil
  • 1 large onion, diced
  • 1 head celery, diced (about 8-10 medium stalks)
  • 5 large carrots, diced
  • 1 bell pepper, diced
  • 1 tbsp garlic, minced
  • 1 tsp smoked paprika
  • 2 tsp italian herbs seasoning
  • 20 oz lean ground chicken or turkey (I use 93% lean)
  • 3 cups creamy tomato sauce (I use Trader Joe's vodka sauce)
  • 4 cups chicken broth (low-sodium if watching salt)
  • 8 cups spinach, chopped
  • 3 cups cheese tortellini
  • 1/4 cup half and half (optional, to make it creamy)

Instructions

  • Add olive oil to a large soup pot and heat on medium heat. Dice onion.
  • Add onion and cook for 3 minutes, stirring occasionally. Meanwhile, chop other veggies.
  • Add celery, carrots, and bell pepper to pot once chopped, continue stirring.
  • Add garlic, smoked paprika, and italian seasoning and cook for about 3 more minutes, stirring frequently.
  • Add chicken or turkey to the pot and break up the meat. Mix frequently to cook the meat throughout.
  • Once the meat is almost cooked, add tomato sauce and chicken broth.
  • Cover and simmer for 10 minutes.
  • Add tortellini to simmering soup, stir, cover and cook for 5 minutes or until tortellini is tender.
  • Add spinach, stir, cover and cook for 2 more minutes.
  • If you desire a creamy soup, add half and half, mix well, and turn off heat.
  • Serve as-is or add grated parmesan on top if desired.
