One-Pot High Protein Tortellini Soup
Ingredients
- 1 tbsp olive oil
- 1 large onion, diced
- 1 head celery, diced (about 8-10 medium stalks)
- 5 large carrots, diced
- 1 bell pepper, diced
- 1 tbsp garlic, minced
- 1 tsp smoked paprika
- 2 tsp italian herbs seasoning
- 20 oz lean ground chicken or turkey (I use 93% lean)
- 3 cups creamy tomato sauce (I use Trader Joe's vodka sauce)
- 4 cups chicken broth (low-sodium if watching salt)
- 8 cups spinach, chopped
- 3 cups cheese tortellini
- 1/4 cup half and half (optional, to make it creamy)
Instructions
- Add olive oil to a large soup pot and heat on medium heat. Dice onion.
- Add onion and cook for 3 minutes, stirring occasionally. Meanwhile, chop other veggies.
- Add celery, carrots, and bell pepper to pot once chopped, continue stirring.
- Add garlic, smoked paprika, and italian seasoning and cook for about 3 more minutes, stirring frequently.
- Add chicken or turkey to the pot and break up the meat. Mix frequently to cook the meat throughout.
- Once the meat is almost cooked, add tomato sauce and chicken broth.
- Cover and simmer for 10 minutes.
- Add tortellini to simmering soup, stir, cover and cook for 5 minutes or until tortellini is tender.
- Add spinach, stir, cover and cook for 2 more minutes.
- If you desire a creamy soup, add half and half, mix well, and turn off heat.
- Serve as-is or add grated parmesan on top if desired.
