Pumpkin Spice Protein Bites

These pumpkin spice protein bites are quick, easy, healthy, and delicious. This recipe is perfect for fall snacking and meal prep!

Ingredients
  

  • 1/4 cup pumpkin puree
  • 1/4 cup almond butter
  • 1 tsp vanilla extract
  • 2 tbsp coconut sugar
  • 1 tsp pumpkin pie spice
  • 1/2 cup plant-based vanilla protein powder
  • 1/4 cup almond flour
  • 2 tbsp white chocolate chips
  • 1/2 tsp coconut oil

Instructions
 

  • In a medium bowl, mix together pumpkin puree, almond butter, vanilla extract, coconut sugar, and pumpkin pie spice
  • Add protein powder and mix well. A thick dough will form, just keep mixing until all the protein powder is combined.
  • Add almond flour and mix again. You may need to mix the dough with your hands to full incorporate it.
  • Roll the dough into 10 balls and place on a plate or small baking sheet lined with parchment paper.
  • Melt white chocolate and coconut oil in a small bowl in the microwave (typically takes 45-60 seconds). Stir well.
  • Drizzle white chocolate over the protein bites and place in the freezer for 5 minutes to harden the chocolate.
