Ingredients

pumpkin puree
1/4

almond butter

tsp
vanilla extract

tbsp
coconut sugar

tsp
pumpkin pie spice
1/2
cup
plant-based vanilla protein powder
1/4
cup
almond flour
2
tbsp
white chocolate chips
1/2
tsp
coconut oil
Instructions
In a medium bowl, mix together pumpkin puree, almond butter, vanilla extract, coconut sugar, and pumpkin pie spice
Add protein powder and mix well. A thick dough will form, just keep mixing until all the protein powder is combined.
Add almond flour and mix again. You may need to mix the dough with your hands to full incorporate it.
Roll the dough into 10 balls and place on a plate or small baking sheet lined with parchment paper.
Melt white chocolate and coconut oil in a small bowl in the microwave (typically takes 45-60 seconds). Stir well.
Drizzle white chocolate over the protein bites and place in the freezer for 5 minutes to harden the chocolate.
