Pumpkin Spice Protein Bites
Ingredients
- 1/4 cup pumpkin puree
- 1/4 cup almond butter
- 1 tsp vanilla extract
- 2 tbsp coconut sugar
- 1 tsp pumpkin pie spice
- 1/2 cup plant-based vanilla protein powder
- 1/4 cup almond flour
- 2 tbsp white chocolate chips
- 1/2 tsp coconut oil
Instructions
- In a medium bowl, mix together pumpkin puree, almond butter, vanilla extract, coconut sugar, and pumpkin pie spice
- Add protein powder and mix well. A thick dough will form, just keep mixing until all the protein powder is combined.
- Add almond flour and mix again. You may need to mix the dough with your hands to full incorporate it.
- Roll the dough into 10 balls and place on a plate or small baking sheet lined with parchment paper.
- Melt white chocolate and coconut oil in a small bowl in the microwave (typically takes 45-60 seconds). Stir well.
- Drizzle white chocolate over the protein bites and place in the freezer for 5 minutes to harden the chocolate.
