Sun-Dried Tomato Chicken Orzo Soup
Ingredients
- 1 tbsp olive oil
- 1 yellow onion, diced
- 1 red bell pepper, diced
- 1 tbsp garlic, minced
- 1/2 tbsp italian seasoning (or 1/2 tsp each: dried oregano, basil, and thyme)
- 1/2 tsp smoked paprika
- 1/2 tsp salt (use less if watching salt)
- 1 lb ground chicken
- 1/4 cup sun-dried tomatoes in olive oil, diced
- 1/3 cup tomato paste
- 4 cups chicken broth (low-sodium if watching salt)
- 1 cup uncooked orzo
- 4 cups spinach, chopped
- 1/2 cup shaved parmesan cheese, for topping
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and bell pepper and sautee for 3-5 min until onions are translucent and slightly browned.
- Add garlic and seasonings, stir, and cook for 2 more minutes.
- Add ground chicken and break up into small chunks. Mix to combine with peppers and onions, stirring frequently until chicken is mostly cooked through.
- Add tomato paste, sun-dried tomatoes, and broth and stir to combine.
- Cover and bring to a boil.
- Once boiling, add orzo and cook for 8 minutes or until tender.
- Add spinach and cook for 1-2 minutes until wilted.
- Remove from heat, serve, and top each bowl with parmesan cheese.
