Custard Oats with Cinnamon Apples
If you’ve never heard of custard oatmeal before, this is your sign to try it out! You add an egg to the oats near the end of cooking, which makes the oats super rich and creamy, giving them a custard-like texture. The addition of the egg also adds extra protein and nutrients! These custard oats are topped with delicious cinnamon spiced apples for a super cozy breakfast bowl.

Oatmeal is one of my favorite go-to breakfasts because it’s quick, easy, and packed with fiber. I always like to add a protein source to oatmeal, whether it’s using milk or protein powder or in this case, an egg! This helps make the meal more satiating to keep you full all morning. This version has 26 grams of protein and 10 grams of fiber!

Custard Oats with Cinnamon Apples
Ingredients
- 1/2 cup rolled oats
- 1 cup milk, any kind (I used almond milk)
- 1/2 tsp vanilla extract
- 1 pinch salt
- 2 tbsp vanilla protein powder (optional, for extra protein)
- 1 egg
- 1 apple, chopped
- 1 tsp butter (can sub coconut oil)
- 1/2 tbsp maple syrup
- 1/2 tsp cinnamon
Instructions
- Add oats, milk, vanilla and salt to a pot over medium heat and cover and cook for about 5 min.
- Meanwhile, cook the apples in a small pan over medium low heat with butter, maple syrup, and cinnamon for about 5 min while stirring, until apples are soft and slightly browned.
- After the oats are soft, stir in protein powder if using. You may need to add an extra splash of milk here if the oats get super thick or start to stick to the bottom of the pot.
- Crack the egg directly into the oats and stir quickly to combine thoroughly. Cook another 1-2 min while stirring.
- Serve in a bowl with the apples on top. I like to add an extra splash of milk here. Enjoy!
