Healthy Pineapple Shrimp Fried Rice
This healthy pineapple shrimp fried rice is one of my go-to weeknight dinners when I’m craving something flavorful but still nutritious. While this dish is no means traditional, it’s inspired by one of my favorite dishes from our local Thai spot. I made it a little healthier by using less oil and doing a combination of regular rice and cauliflower rice for some extra veggies and fiber.

This recipe is great for weeknight dinners because it only takes about 30 minutes to make start to finish. You can use fresh or frozen shrimp. I like to keep frozen shrimp in the freezer so I can whip up dishes like this throughout the week. Unlike frozen chicken, it only takes a few minutes to defrost frozen shrimp. This recipe also utilizes frozen corn, peas, and cauliflower rice so you don’t have to do too much chopping.
This recipe is also healthier than your typical fried rice! It uses lots of veggies and cauliflower rice. Each serving has over 7 grams of fiber and 25 grams of protein. This combination of fiber, protein, and healthy fats helps slow digestion and keep you fuller for longer! The spices (curry and ginger) also offer anti-inflammatory benefits.

One thing to note is that this recipe calls for pre-cooked rice. This would be a great recipe to make if you have leftover rice in the fridge. Microwave or frozen rice packets work well too here. If you don’t have those on hand, just plan for a few extra minutes to cook your rice ahead of time. 1 cup uncooked rice will yield about 2 cups cooked.

Healthy Pineapple Shrimp Fried Rice
Ingredients
- 2 tbsp olive oil, divided
- 1 lb shrimp (fresh or frozen)
- 1 medium onion, chopped
- 3 medium carrots, chopped
- 1 tbsp garlic, minced
- 1 cup frozen corn
- 1 cup frozen peas
- 2 cups frozen riced cauliflower
- 2 cups cooked rice
- 2 tbsp low-sodium soy sauce
- 1 tsp curry powder
- 1 tsp ground ginger
- 1 cup canned pineapple chunks, drained and chopped
- 1/2 cup cashews
Instructions
- Heat a large pan with 1 tbsp olive oil over medium heat.
- Add onions and carrots and cook for 2-3 minutes while stirring until onions become translucent.
- Add garlic and cook for 1-2 more minutes.
- Add frozen corn, peas, and cauliflower rice. Cook for about 8 minutes or until peas are soft, stirring often.
- Meanwhile, prepare the shrimp. If using frozen shrimp, run under cold water in a strainer in the sink for 3 minutes, mixing often. Pat dry. Heat a medium pan with 1 tbsp olive oil over medium-high heat. Place shrimp in the heated pan and cook for 2-3 minutes on each side until lightly browned and fully cooked through. Season with salt and pepper if desired. Remove from heat and set aside.
- To the pan with the veggies, add cooked rice, soy sauce, curry powder, and ginger and stir. Cook for 2 more minutes.
- Add pineapple chunks and cashews and mix again.
- Finally, add shrimp to the fried rice and cook until shrimp are heated through. Serve and enjoy!
