I am a huge fan of oatmeal. Oats are rich in soluble fiber, which helps support digestion and may help lower cholesterol. Since oats are primarily a carbohydrate source, I always recommend pairing oats with a protein and healthy fat source to make them a balanced meal. There are several ways you can add protein to your oats such as mixing in a scoop of protein powder (like in this recipe), adding a scoop of greek yogurt on top, or even cooking them with egg whites. To add healthy fats, you can add chopped nuts or seeds or a spoonful of nut butter on top.

Note: this recipe gets most of its sweetness from the protein powder. If you skip the protein powder, you may want to add an additional sweetener to the base of the oatmeal.

Ingredients
  

  • 1/2 cup rolled oats
  • 1 cup water (or milk)
  • 1/4 cup pumpkin puree
  • 1/2 tsp vanilla extract
  • 1/2 tsp pumpkin pie spice
  • 1 pinch salt
  • 1/4 cup vanilla protein powder
  • 1/2 tbsp maple syrup
  • 2 tbsp chopped pecans

Instructions
 

  • Add oats and water (or milk) to a small pot, cover and cook over medium heat until boiling (about 3-4 minutes).
  • Remove lid and stir in pumpkin puree, vanilla, pumpkin pie spice, and salt. Cook for 1-2 more minutes until oats are fully cooked.
  • Remove from heat and stir in protein powder until fully combined.
  • Transfer to a bowl and top with maple syrup and chopped pecans.
