Ube Chia Pudding

Iβve made so many different variations of chia pudding but this ube chia pudding is one of my new favorites. If you like the flavor of ube, youβre going to love this version, too. Ube is a type of purple yam native to the Philippines. It has a sweet, nutty flavor and a gorgeous purple color. While this recipe is by no means traditional, itβs got the ube flavor without a whole lot of added sugars. All you need are five ingredients, ten minutes of prep, and youβve got a snack or breakfast that is packed with fiber and flavor.

To make it, you’ll simply mix the chia seeds with milk, maple syrup, vanilla extract, and ube extract. Then, you’ll let it chill in the fridge for a few hours (or overnight). The chia seeds do their magic, thickening everything into a creamy pudding.
Chia seeds are rich in fiber and omega-3 fats, and even have a little bit of plant-based protein, making them an excellent base for a balanced meal. For extra protein, pair your chia pudding with a scoop of Greek yogurt or use a higher protein milk instead. Adding protein to this meal will help you stay fuller for longer. Ube Chia Pudding
Ingredients
- 1/2 cup chia seeds
- 2 cups milk of choice
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1/2 tsp ube extract
Instructions
- In a large bowl or tupperware container, add chia seeds, milk, maple syrup, vanilla, and ube extract and mix until well combined and no clumps remain.
- Cover and refrigerate for about 4 hours or until it reaches desired consistency.
