Gingerbread Spice Chia Seed Pudding
If you love the cozy spiced flavor of gingerbread cookies, this gingerbread spice chia pudding is about to be your new favorite holiday breakfast or snack. It has all the warm spices and flavors of a classic gingerbread treat, but in a nutritious form that will keep you energized all day!

This simple chia pudding takes less than 10 minutes to prep and then sets in the fridge for a few hours (or overnight). It’s made with chia seeds, milk, molasses, and maple syrup for natural sweetness, and all the good holiday spices. I added ginger, cinnamon, cardamom, cloves, and nutmeg. The result is creamy, perfectly spiced, and full of festive flavor.
Not only does this recipe taste like dessert, but it’s also packed with nutrition. Chia seeds provide fiber, omega-3 fats, and plant-based protein to help keep you full and satisfied. Each serving of this recipe has 7 grams of fiber to help you reach your daily fiber goals! For a higher-protein option, you can layer it with Greek yogurt or make it with high-protein milk. Add your favorite toppings like crushed ginger cookies, chopped pecans, or a dollop of whipped cream for an extra festive touch.

This gingerbread spice chia pudding makes the perfect healthy holiday breakfast, snack, or even dessert. It’s great for meal prep, travels well, and keeps in the fridge for several days. This way you can enjoy a little holiday cheer all week long!
