I’ve made so many different variations of chia pudding but this Thai tea chia pudding has got to be one of my new favorites. If you like Thai tea, you’re going to love this variation, too. While this recipe is by no means traditional, it’s got the classic Thai tea flavor without being too sweet. All you need are four ingredients, ten minutes of prep, and you’ve got a snack or breakfast that is packed with fiber and healthy fats.

Thai Tea Chia Pudding

To make it, brew a quick Thai tea concentrate using Thai tea bags and hot water, without added sugar like a lot of the concentrates have. Then, mix it with coconut milk, chia seeds, and maple syrup, whisk it up, and let it chill in the fridge for a few hours (or overnight). The chia seeds do their magic, thickening everything into a creamy pudding.

Chia seeds are rich in fiber and omega-3 fats, and even have a little bit of plant-based protein, making them an excellent base for a balanced meal. For extra protein, pair your chia pudding with a scoop of Greek yogurt or use a higher protein milk instead. Adding protein to this meal will help you stay fuller for longer.

Ingredients
  

  • 4 Thai tea bags
  • 1/2 cup boiling water
  • 1/2 cup chia seeds
  • 1 1/2 cup coconut milk
  • 2 tbsp maple syrup

Instructions
 

  • Steep Thai tea bags with 1/2 cup boiling water for about 5 minutes.
  • In a medium bowl or tupperware container, add chia seeds, coconut milk, maple syrup, concentrated Thai tea, and mix until well combined and no clumps remain.
  • Cover and refrigerate for about 4 hours or until it reaches desired consistency.
