Matcha Chia Seed Pudding
I’m always making new chia seed puddings, but this matcha chia pudding is one of my tried and true variations that I keep coming back to. If you like the flavor of matcha tea, you are going to love this one too. It’s earthy from the matcha, creamy from the milk, and has just a little bit of sweetness from the maple syrup.

All you need are chia seeds, milk, matcha powder, vanilla extract, and a little maple syrup. Five ingredients, five minutes of prep, and you’ve got a snack or breakfast that tastes like dessert but is packed with fiber and healthy fats. To make it, mix your matcha powder with a little bit of hot water with a whisk or a handheld frother to dissolve any clumps. Then, mix it with the rest of the ingredients and let it chill in the fridge for a few hours (or overnight). The chia seeds do their magic, thickening everything into a creamy pudding.

Chia seeds are rich in fiber and omega-3 fats, and even have a little bit of plant-based protein, making them an excellent base for a balanced meal. Each serving of this recipe has 7 grams of fiber, which is great for digestion and keeping you full! For extra protein, pair your chia pudding with a scoop of Greek yogurt or use a higher protein milk instead. Adding protein to this meal will also help you stay fuller for longer.

Matcha Chia Seed Pudding
Ingredients
- 1 tbsp matcha powder
- 1/2 cup chia seeds
- 2 cups milk of choice (I used coconut milk)
- 2 tbsp maple syrup
- 1 tsp vanilla extract
Instructions
- Mix matcha powder with a small amount of hot water using a whisk or handheld frother to dissolve any clumps.
- In a medium bowl or tupperware container, mix chia seeds, milk, maple syrup, vanilla extract, and matcha mixture. Cover and refrigerate for 4 hours or overnight.
