These protein bites are perfect for meal prep, afternoon snack cravings, or when you want something sweet after dinner. They’re also great for keeping in the fridge when you want a grab and go option that feels like a treat. They contain a combination of protein, healthy fats, and carbs, which makes these more satisfying than a typical sugary snack. Pairing protein with fats and carbs helps slow digestion and keeps blood sugar more stable. If you want even lower added sugar, you can sub the maple syrup for a sugar-free liquid sweetener.

The key to this recipe is making sure to use plant-based protein powder. Whey or collagen protein will dissolve in the water and make a sticky mess when mixed with wet ingredients. Plant-based protein provides the right structure and texture for perfectly soft yet firm bites. This makes them easy to shape and store, so you can keep them on hand for busy days.

These will keep in the fridge for about 3-5 days. They freeze well, so if you don’t plan on eating all of them right away, I recommend freezing some!
