Chocolate Peanut Butter Protein Bites
Ingredients
- 1/2 cup peanut butter (creamy)
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1/2 cup plant-based chocolate protein powder
- 1/4 cup powdered peanut butter
- 2 tbsp cocoa powder
- 2 tbsp dark chocolate chips
- 1 tsp coconut oil
- 2 tbsp peanuts, chopped
- 1 pinch sea salt
Instructions
- In a large bowl, add peanut butter, maple syrup, and vanilla extract and mix until combined.
- Add protein powder, powdered peanut butter, and cocoa powder and mix again until fully incorporated. The dough will be very thick. It may be easier to mix with your hands at this point.
- Roll the dough into 12 balls and place on a plate or small baking sheet lined with parchment paper.
- Melt dark chocolate chips and coconut oil in a small bowl in the microwave (typically takes 45-60 seconds). Stir well.
- Drizzle melted chocolate over the protein bites. Sprinkle with chopped peanuts and sea salt. Place in the freezer for 5 minutes to set the chocolate.
