I’m always making new chia seed pudding variations, and my most recent creation is this chocolate espresso chia pudding. If you’re a fan of coffee and chocolate, you are going to love this recipe. It’s rich, creamy, and indulgent, while still being packed with nutrients and fiber (8 grams per serving)! This makes a great breakfast, snack, or even dessert, and it only takes about 10 minutes to prep!

You have a couple options to get the mocha flavor. If you have an espresso machine, brew a double shot to pour right into the mix. If not, you can easily make a mixture of instant coffee and hot water to get a similar taste. Then, mix it with milk, chia seeds, cocoa powder, and maple syrup for sweetness, Whisk it up and let it chill in the fridge for a few hours (or overnight). The chia seeds do their magic, thickening everything into a creamy pudding.

Chia seeds are rich in fiber and omega-3 fats, and even have a little bit of plant-based protein, making them an excellent base for a balanced meal. Ingredients
  

  • 1/2 cup chia seeds
  • 1 3/4 cup milk of choice (I used coconut milk)
  • 2 shots espresso (or 1 tbsp instant coffee dissolved in 1/4 cup hot water)
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup
  • 2 tbsp cocoa powder

Instructions
 

  • To a large tupperware container or bowl, add chia seeds and milk and mix right away to combine, being sure to break up any clumps.
  • Add espresso, vanilla, maple syrup, and mix again.
  • Sift cocoa powder in to prevent clumps, them mix well one last time.
  • Cover and refrigerate for 4 hours or overnight to thicken.
