They are so delicious, packed with protein and fiber, and you get a whole week of grab-and-go breakfasts made in less than an hour.

Healthy Freezer Breakfast Burritos

Each burrito has 32 grams of protein and 12 grams of fiber. This combination helps keep you full for several hours. The protein comes from eggs, turkey bacon, cheese, and black beans. The fiber also comes from the black beans, as well as from the whole wheat tortillas and veggies. The onion, red bell pepper, and spinach add flavor and vitamins C, A, and K.

To make them, you’ll first cook the turkey bacon, veggies, and eggs. You’ll add those along with smashed black beans and cheese to the tortillas. Then, roll them up tightly and pan fry for a few minutes on each side to get a brown and crispy exterior.

Once you have assembled the burritos, let them cool completely then wrap individually in foil. You have two options for storing these burritos:

  • Fridge: Refrigerate for up to 3 days. To re-heat, wrap in a damp paper towel then microwave for 30 seconds on each side or air fry at 350F for about 3 minutes on each side.
  • Freezer: These will last months in the freezer. To re-heat, wrap in a damp paper towel then microwave for 1 minute on each side or until hot throughout. Or, you can air fry at 350F for 4-5 minutes on each side or until the center is hot.

Ingredients
  

  • 10 slices turkey bacon
  • 2 tsp olive oil, divided
  • 1/2 large onion, diced
  • 1 large red bell pepper, diced
  • 3 cups spinach, chopped
  • 1/2 tsp garlic powder
  • 5 eggs
  • 5 8" whole wheat tortillas
  • 3 oz cheddar cheese, grated
  • 1 can black beans, drained, rinsed, and mashed with fork

Instructions
 

  • First cook turkey bacon using preferred method (oven, pan fry, etc).
  • Meanwhile, add 1 tsp of olive oil to a large pan and heat over medium heat. Add onion and cook for 2-3 minutes until translucent. Add red bell pepper and cook for another 5 minutes, stirring occasionally. Add spinach and garlic powder and cook for another 2-3 minutes until soft. Add salt and pepper to taste.
  • Heat a medium pan over medium heat and add remaining tsp olive oil. Add eggs to pan and scramble for 2-3 minutes until fully cooked. Add salt and pepper to taste.
  • Assemble the burritos by adding 2 strips turkey bacon and about one-fifth of the mashed beans, veggies, eggs, and cheese to each tortilla and roll tightly. Repeat for the remaining burritos.
  • Cook burritos in a large pan for 1-2 minutes on each side to brown, the remove from heat and allow them to cool.
  • Once cooled, wrap each burrito in foil and place in the fridge for up to 3 days or freeze for later.
