Ingredients
  

For the Sweet Potatoes
  • 3 cups sweet potatoes, diced
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
For the Burger Meat
  • 1 lb lean ground beef (I used 93% lean)
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp barbecue sauce
For the Burger Sauce
  • 1/4 cup dill pickles, diced
  • 1/4 cup plain greek yogurt
  • 1 tbsp mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp barbecue sauce
  • 1 tbsp yellow mustard
  • 2 tbsp fresh dill, minced
To Assemble the Bowls
  • 4 cups shredded iceberg lettuce
  • 1 cup tomatoes, chopped
  • 1/2 cup cheddar cheese, shredded
  • 1/2 cup banana peppers or pickled onions (optional, for topping)

Instructions
 

For the Sweet Potatoes

  • If using an air fryer, skip this step. If using an oven, preheat to 400F and line a baking sheet with parchment paper.
  • In a large bowl, add sweet potatoes, olive oil, salt, pepper, and paprika and mix until seasoning is evenly distributed. Add to air fryer basket or baking sheet and spread out evenly. Air fry at 400F for 12-15 minutes or bake at 400F for 15-18 minutes until insides are soft and outsides are slightly browned.

For the Beef

  • While the sweet potatoes are cooking, heat a large pan over medium heat and add beef. Break up into small chunks. Add seasonings and barbecue sauce and cook for 7-10 minutes, while stirring occasionally.

For the Burger Sauce

  • Meanwhile, make the sauce by mixing together diced pickles, Greek yogurt, mayonnaise, ketchup, barbecue sauce, mustard, and dill.

Assembling the Bowls

  • Once the sweet potatoes and beef are cooked, assemble the bowls. Add lettuce, tomatoes, beef, and sweet potatoes to the bowl and top with burger sauce, shredded cheese, and banana peppers or pickled onions if desired.
