Ingredients
  

  • 1/3 cup coconut oil, melted
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract
  • 1 tbsp pumpkin pie spice
  • 1/2 tsp salt
  • 3 cups rolled oats
  • 1 cup raw walnuts, chopped
  • 1 cup raw pumpkin seeds

Instructions
 

  • Preheat oven to 350F and line a large baking sheet with parchment paper.
  • In a large bowl, add melted coconut oil, maple syrup, vanilla, pumpkin pie spice, and salt and mix well to combine.
  • Add oats, walnuts, and pumpkin seeds and mix well until evenly coated.
  • Spread the mixture evenly over the baking sheet.
  • Bake for 20-25 minutes until golden and crisp.

Notes

Use raw nuts and pumpkin seeds so that they don’t burn during cooking. If you have toasted nuts or seeds, add them after baking!
This granola will keep in an air-tight container at room temperature for up to a month.
