These pumpkin spice protein bites are one of my favorite things to make when I want a quick fall snack. They’re easy to make, don’t require any baking, and are so delicious. It only takes about 15 to 20 minutes to whip up a batch so that you have a cozy sweet treat ready to go for the week.

Not only are these bites delicious, but theyโ€™re also nutrient-dense. Each bite has over 6 grams of protein, making them a great option for satisfying a sweet tooth while also fueling your body. The pumpkin adds fiber and vitamins, while the almond butter and almond flour bring healthy fats.

The key to this recipe is making sure to use plant-based protein powder. Unfortunately when mixed with wet ingredients like pumpkin and almond butter, whey protein or collagen dissolve in the water and make a sticky dough. Plant-based protein provides the right structure and texture for soft but not sticky bites. This makes them easy to shape and store, so you can keep them on hand for busy days.

Pumpkin Spice Protein Bites

These pumpkin spice protein bites are quick, easy, healthy, and delicious. This recipe is perfect for fall snacking and meal prep!

Ingredients
  

  • 1/4 cup pumpkin puree
  • 1/4 cup almond butter
  • 1 tsp vanilla extract
  • 2 tbsp brown sugar
  • 1 tsp pumpkin pie spice
  • 1/2 cup plant-based vanilla protein powder
  • 1/4 cup almond flour
  • 2 tbsp white chocolate chips
  • 1/2 tsp coconut oil

Instructions
 

  • In a medium bowl, mix together pumpkin puree, almond butter, vanilla extract, coconut sugar, and pumpkin pie spice
  • Add protein powder and mix well. A thick dough will form, just keep mixing until all the protein powder is combined.
  • Add almond flour and mix again. You may need to mix the dough with your hands to fully incorporate it.
  • Roll the dough into 10 balls and place on a plate or small baking sheet lined with parchment paper.
  • Melt white chocolate and coconut oil in a small bowl in the microwave (typically takes 45-60 seconds). Stir well.
  • Drizzle white chocolate over the protein bites and place in the freezer for 5 minutes to harden the chocolate.
