Birthday Cake Protein Bites

These birthday cake protein bites are one of my favorite treats that also come with a little protein boost. They’re soft and chewy and perfect for when you’re craving something sweet but still healthy. Because unfortunately we probably shouldn’t be eating birthday cake every single day! These are made with simple ingredients and come together in 15 minutes or less.

Birthday Cake Protein Bites

The base of these bites is cashew butter, which gives them a rich, creamy texture and healthy fats that help keep you satisfied. Maple syrup adds just enough sweetness, while vanilla and almond extract give that classic birthday cake flavor. You’ll use some protein powder for the protein boost, and a little almond flour to help thicken everything up. Finally, adding some colorful sprinkles make these feel fun and add a little extra texture, too!

These protein bites are perfect for meal prep, afternoon snack cravings, or when you want something sweet after dinner. They’re also great for keeping in the fridge when you want a grab and go option that feels like a treat. They contain a combination of protein, healthy fats, and carbs, which makes these more satisfying than a typical sugary snack. Pairing protein with fats and carbs helps slow digestion and keeps blood sugar more stable. If you want even lower added sugar, you can sub the maple syrup for a sugar-free liquid sweetener.

An important note: for this recipe, you will need to use a plant based protein powder. Unfortunately, subbing an animal based protein won’t work here. Whey or collagen protein dissolve in liquids, so rather than thickening the batter, they would leave you with a sticky mess! Any plant based protein should work, but recently I have been liking the Truvani brand.

These no-bake birthday cake protein bites are a healthier treat for when you're craving something sweet! Plus, they're so quick and easy!

Ingredients
  

  • 1/2 cup cashew butter
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1/2 cup vanilla plant-based protein powder (do not sub whey protein)
  • 1/4 cup almond flour
  • 2 tbsp sprinkles
  • pinch sea salt

Instructions
 

  • In a large bowl, add cashew butter, maple syrup, vanilla extract and almond extract and stir until combined.
  • Add protein powder and mix again until fully incorporated.
  • Add almond flour and mix again. The dough will be very thick. It may be easier to mix with your hands at this point.
  • Add sprinkles and a pinch of salt and mix again.
  • Roll into about 12 1-inch balls. Place in an airtight container and store in the fridge.

Notes

These will keep in the fridge for about 3-4 days. They freeze well, so if you don’t plan on eating all of them right away I recommend freezing some!
