Mango Coconut Chia Pudding
If you love tropical flavors, this mango coconut chia pudding is for you. With just five ingredients, it comes together in less than 10 minutes of prep. After a few hours in the fridge, you’ll have a creamy chia pudding that’s naturally satisfying and full of fiber. The sweetness of the mango and maple syrup goes perfectly the creamy coconut and lime zest. This is a great snack or breakfast option to add to your spring and summer rotation.

This recipe is ideal for meal prep since it can be made ahead and stored in the fridge for several days. It’s a great grab-and-go breakfast, dessert, or snack. It tastes indulgent while actually being packed with nutrients. Chia seeds are rich in fiber and omega-3 fats, and even have a little bit of plant-based protein, making them an excellent base for a balanced meal. For extra protein, pair your chia pudding with a scoop of Greek yogurt or cottage cheese. Adding protein to this meal will help you stay fuller for longer.
