Cinnamon Sugar Roasted Chickpeas
As a dietitian, I have a lot of patients ask me for healthy snack ideas that actually taste good, too. And honestly, I totally get it. Sometimes you just want something you can crunch on that actually hits the spot. Roasted chickpeas are one of my go-to recommendations because they’re simple to make and super nutritious. These cinnamon sugar roasted chickpeas are perfect for satisfying sweet or crunchy cravings in a healthy way.

For this variation, all you need are five ingredients: canned chickpeas, olive oil, cinnamon, sugar, and a pinch of salt. The key to getting them perfectly crispy is making sure you dry the chickpeas really well before roasting. Toss them with olive oil, cinnamon, and sugar, mix well, and roast until golden and crisp. That’s it!
Chickpeas are naturally high in fiber and plant protein, which makes this snack more filling than a handful of chips or candy. Fiber also helps support digestion and steady blood sugars, and the protein gives this snack some staying power so you’re not hungry again 20 minutes later.

You can snack on these straight off the pan (my preferred method), take them as an on-the-go snack, or even sprinkle them on smoothie bowls for crunch. Cinnamon Sugar Roasted Chickpeas
Ingredients
- 1 can chickpeas
- 1 tbsp olive oil
- 1 tbsp sugar
- 1/2 tbsp cinnamon
- 1/4 tsp salt (optional)
Instructions
- Preheat oven to 400F. Line a small baking sheet with parchment paper.
- Drain and rinse chickpeas, then pat dry between paper towels until chickpeas are fully dry.
- In a bowl, mix chickpeas with olive oil, sugar, cinnamon, and salt until evenly distributed.
- Spread seasoned chickpeas evenly on baking sheet.
- Bake for 27-30 minutes or until chickpeas are golden, crunchy, and fully dried. Make sure there is no moisture otherwise they won't be shelf stable!
