White Chocolate Matcha Stuffed Dates

White Chocolate Matcha Stuffed Dates
Ingredients
- 10 medjool dates
- 1/4 cup cashew butter
- 2 tsp matcha
- 3 tbsp white chocolate chips
- 1 tsp coconut oil
Instructions
- Slice a slit in the dates and remove pits. Set on a plate or baking sheet lined with parchment paper.
- In a small bowl, mix cashew butter with matcha until fully combined.
- Stuff the dates with the matcha cashew butter mixture.
- In another small microwave-safe bowl, add the white chocolate chips and coconut oil. Microwave for 30-60 seconds and stir until fully melted.
- Drizzle the white chocolate over the stuffed dates. Add another dusting of matcha to the tops if desired.
- If eating immediately, place in freezer for ~5 minutes until chocolate hardens. If making for later, store in the refrigerator.
