Lemon Cheesecake Chia Pudding

Lemon Cheesecake Chia Pudding

If you love cheesecake but want something a little bit lighter, you’re going to love this lemon cheesecake chia pudding. It has that creamy, tangy, lemony cheesecake flavor but it’s made with simple ingredients that you can feel good about. Plus, it’s incredibly easy to make and perfect for meal prep.

Each serving provides about 10 grams of protein and 7 grams of fiber, making it a satisfying option with extra nutritional benefits. The chia seeds are packed with fiber, which supports digestion and helps keep you full, while the Greek yogurt adds creaminess and a boost of protein. The combination creates a balanced base that’s both filling and energizing. One of my favorite ways to enjoy this is as part of a balanced breakfast. You can pair it with extra Greek yogurt for additional protein, add fresh fruit for natural sweetness and nutrients, and top it with granola for some crunch. It’s a simple way to turn it into a more complete, well-rounded meal that will keep you satisfied all morning.

That said, this chia pudding is just as good on its own as a snack or a healthier dessert. The hint of maple syrup adds just enough sweetness, while the lemon juice and zest give it a refreshing citrus flavor without being overly heavy.

This recipe is also great for meal prep. You can make it ahead of time, store it in the fridge, and have a ready-to-go option for busy mornings or quick snacks throughout the week. It only takes a few minutes to mix together, then the fridge does the rest of the work. I hope you enjoy this lemon cheesecake chia pudding. Leave a comment below if you try it!

Ingredients

  • 1/2 cup chia seeds
  • 1 cup plain Greek yogurt
  • 1 1/2 cup milk, any kind (I used almond milk)
  • 3 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp sugar-free cheesecake pudding mix

Instructions

  • In a large tupperware container or bowl, add chia seeds, yogurt, and milk and mix well until fully combined and there are no clumps of yogurt or chia seeds.
  • Add lemon juice and lemon zest and mix again.
  • Add maple syrup, vanilla, and cheesecake pudding mix and mix again.
  • Cover and refrigerate for at least 2 hours to allow chia seeds to fully thicken. This variation will thicken more quickly than my other chia recipes due to the Greek yogurt.
