These are made with simple ingredients and come together in about 20 minutes.

The carrot adds fiber and vitamins, almond butter and almond flour bring healthy fats, and the protein powder makes them filling enough to keep you energized between meals.

They’re also great for keeping in the fridge when you want a grab and go option that feels like a treat. Unfortunately when mixed with wet ingredients like grated carrots and almond butter, whey or collagen proteins dissolve in the water and make a sticky dough. Ingredients
  

  • 1/2 cup almond butter (creamy)
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup finely grated carrot (packed)
  • 1/2 cup plant-based vanilla protein powder
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp nutmeg
  • 1/4 cup almond flour
  • 2 tbsp white chocolate chips
  • 1/2 tsp coconut oil

Instructions
 

  • In a large bowl, add almond butter, maple syrup, vanilla extract and grated carrots and mix until combined.
  • Add protein powder and spices and mix again until fully incorporated.
  • Add almond flour and mix again. The dough will be very thick. It may be easier to mix with your hands at this point.
  • Roll the dough into 12 balls and place on a plate or small baking sheet lined with parchment paper.
  • Melt white chocolate and coconut oil in a small bowl in the microwave (typically takes 45-60 seconds). Stir well.
  • Drizzle white chocolate over the protein bites and place in the freezer for 5 minutes to harden the chocolate.

Notes

These will keep in the fridge for about 3-4 days. They freeze well, so if you don’t plan on eating all of them right away I recommend freezing some!
