Spinach Artichoke Orzo Salad
If you like spinach artichoke dip, you’ll love this spinach artichoke orzo salad. It’s quick and easy to make with just a few ingredients. Its packed with plenty of flavor from the parmesan cheese, marinated grilled artichokes, spinach, and garlic. This makes a perfect summer side dish to your weeknight dinners or to bring to a gathering.

The best part about this recipe is that it takes less than 10 minutes to throw together if you cook the orzo ahead of time. But, since orzo is so quick to cook (8-10 minutes) anyways, you can make the whole thing in about 25 minutes if you’re starting with dry orzo. Once the orzo is cooled, you’ll just throw everything in a bowl, mix together, and you’re good to go!
Besides being delicious, this recipe has some nutrition benefits too. Each serving has 10 grams of protein and 4 grams of fiber to help keep you full and support digestion. Spinach Artichoke Orzo Salad
Ingredients
- 2 cups cooked orzo, cooled
- 2 cups spinach, finely chopped
- 1 cup marinated grilled artichoke hearts, drained and chopped
- 1/2 cup parmesan cheese, shredded
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- All all ingredients to a large mixing bowl and mix well to combine.
